- Chocolate, a food beloved by people around the world, comes from a small tree that has roots deep in the Mesoamerican culture. The Power of Chocolate is a festival that celebrates the cacao plant, the chocolate that derives from it, and the many forms it takes–ceremonial drink, delightful beverage, a loving treat shared on Valentineʻs Day, or a distinctive ingredient in savory dishes. In this video, Mitsitam Café executive chef, Freddie Bitsoie (Navajo), demonstrates the use of chocolate in molé (a variety of Mexican sauces) and chili. This is the first of two cooking demonstrations given by chef Bitsoie on February 12, 2017 in the Potomac Atrium of the National Museum of the American Indian.
